We are all slowly depleting the earth. Our current food system is not sustainable, but finite. Restaurant De Nieuwe Winkel proves there are other ways and cooks to make the world a better place.
This leading restaurant in Nijmegen, awarded two Michelin stars, uses only plants: botanical gastronomy. The restaurant collaborates with food forest Ketelbroek, which co-founder and botanist Wouter van Eck calls ‘the paradise of lazy farmers’. There is no ploughing, sowing, weeding, fertilising and certainly no spraying. Instead, people plant and then harvest endlessly: seeds, flowers, shoots, buds, tubers, nuts, apples, pears and plums.
